This was a fantastic opportunity for us to get a taste of the daily life of organic farming…

Hokkaido Pumpkin
Has an exceptionally natural, satisfyingly sweet flavour.
Hokkaido pumpkin is very helpful to keep your blood sugar level stable.
It is a common ingredient in vegetable tempura and makes wonderful soups and other dishes.
For further information, see our brochure with 15 recipes for pumpkin pies,
tempura, soups and nourishing dishes you will definitely enjoy!
Most common Hokkaido pumpkins
Ushiki Kuri – orange, round shape, nowadays in The Netherlands available in almost all supermarkets and natural food shops
Japan Cup – grey-green, most sweet, excellent for tempura
Nuty Delica – dark green, more dry texture with a very sweet nut-like taste, delicious in kinpira and aduki bean dishes
Nutrition
Hokkaido pumpkins are rich in complex carbohydrates, beta-carotene, iron, vitamin C, potassium, and smaller traces of calcium, folic acid and B vitamins. They are almost as nutritious as whole cereals and are an easy introduction to whole and healthy food, especially for children
Cooking tip
Early in the season, use pumpkins without peeling them.
Later on in January the skin becomes a little harder and from that time on you should take the skin off. For the recipes in the brochure you
may use the green as well the orange pumpkins, unless mentioned differently.
