Patricio was introduced to macrobiotics at the age of five by his mother, Luchi Baranda, in his native country Spain. After graduating from the Kushi Institute, he began to teach and give cooking classes in Southeast Asia, South America, and Spain. In 1998 he moved to Japan to spread macrobiotics through developing macrobiotic restaurants, giving cooking classes, lectures, and publishing macrobiotic cookbooks. Recently he opened his own educational macrobiotic centre in Tokyo.

The importance of Pickles and other Fermented Foods and Sea Vegetables in our daily meals
  Pickles, rich on vitamins, amino acids and minerals are the finishing touch for your meals. They help your digestion to the optimum. Patricio will discuss a variety of traditional pickles of Japan, such as miso, shoyu, umeboshi and natto. As healing foods they belong to the best in the world!
Sea vegetables are fast becoming an indispensable food for modern living. Coming from the ocean, sea vegetables contain a broad range of minerals with alkalinizing properties. This can help offset the demineralizing and acidifying effects of our modern food and environment that leads to the rise of many current diseases. Meanwhile sea vegetables have been found to protect us from the effects of an increasingly polluted environment by eliminating toxins and radiation from our bodies

10.00 - 12.30 Cooking Class with Patricio: Delicious Pickles and Sea Vegetables
  Patricio will show you how to prepare a variety of pickles from the season’s vegetables, tofu and amazake. The use of sea salt, shoyu, umesu and other tasty ingredients in the making of pickles will be discussed. Typical Japanese pickles and sea vegetables will be used in savoury, colourful and healthy dishes.
The various tastes will surprise you!

16.00 - 18.30 Hands-on workshop with Horriah & Valentina:
Most popular, tasty traditional Japanese dishes. And of course a fresh and yummy dessert!

  Learn the most delicious and attractive protein rich dishes with use of a different types of tofu, tempeh and seitan in surprising Japanese dishes to everyone’s taste. Those plant based, unique foods from Oriental origin contain healthier nutrients, that are easier to digest, than those found in animal products

In case of cancellation more than six weeks prior to a course, a full refund is granted except for the non-refundable down payment. Less than six weeks prior to a course or departure during a course, than no refund is possible

In case of cancellation, more than 6 weeks prior to a course, full refund is granted except for the non-refundable down payment. Less than six weeks prior to a course, or if interrupting a course, no refund is possible. This policy is valid for all educational programs.

The minimum amount of registrations for the course is 7. We reserve the right to cancel the course if there are less than 7 registrations.

In case of this type of cancellation, 1 week notice before the course starts, full refund is granted or you can leave your credit amount with us to follow next/another course.
